Michel Bras was in 2016 voted as one of the most influential chefs in the world, his perfect understanding of ingredients and carefully crafted exceptional cuisine provides the perfect showcase of his passion for nature. He is known for inventing a dish called the chocolate coulant, of which more anon, but his best known dish is his gargouillou.
