Hertog Jan is located just outside Bruges in the suburb of Sint Michiels, the restaurant takes place in a historical farm where the restaurant owners previously organically produced many herbs, vegetables and flowers, which also in these gardens they now produce around ninety-five percent of the herbs, vegetables and fruits that are used in the kitchen. Chef Gert De Mangeleer is still cooking on a high-tech level with a strong focus on spices, vegetables and fruits. The food at Hertog Jan is technically strong and complex but comes across as relaxed and completely authentic.
